Chia Banana Breakfast Pudding

I’ve gotten a few request for more breakfast recipes other than different oats recipes or smoothies. Traditional breakfasts tend to be centered around meat, dairy, and eggs, it tends to throw a curve ball for those of us on the-road-less-cruel. But fear not, give me a curve ball and I become the Great Bambino himself.

Attempting to get more nutritional bang for my buck, I turned to chia seeds. I also wanted something super easy, filling and satisfying, and of course, delicious. My Chia Banana Breakfast Pudding is not only extremely nutritious, it is easy to prepare and requires no cooking or eyeing what-so-ever. All you need is a good night’s sleep and in morning you have yourself this Super Food breakfast awaiting your rise.

Chia seeds are said to be a “Super Food” having both nutritional and medicinal values. Chia seed are an excellent source of essential fatty acids which help support health, boost metabolism and promote lean muscle mass. Chia is also a great source of fiber, iron, calcium, magnesium, zinc, and phosphorus. They also are a great source of antioxidant, containing more than fresh blueberries. Chia seeds are high in protein and its swelling abilities cleanse and soothe the colon while absorb toxins.

Yes, a super food indeed.

Chia Banana Breakfast Pudding:

1 large banana

1 c. almond milk

2 tsp chia seeds

1 packet stevia

1/4 tsp almond extract

1 scoop Vega Vanilla Chai protein (or vanilla protein of your choice)

In a medium-sized bowl or Tupperware container, start by mashing the banana with a fork.

Next, add the almond milk and continue to mash, combining the banana with the almond milk.

Add the chia seeds, stevia, extract, and Vega, stir until everything is well incorporated. It will be slightly runny, but the chai seeds and banana should thicken it up once it is well combined.

Place in the fridge overnight covered with plastic wrap or the Tupperware top. The chia seed will absorb the liquid and create a thick rich pudding-like substance.

In the morning, give it a good stir, place it in your favorite breakfast bowl and you have yourself a super food breakfast that is super good. And you didn’t have to do a thing. Now that is my way to start the day off right.

*A little disclaimer: the pudding seems to set up better when placed in a bowl with plastic wrap than it does in a Tupperware container. Just be sure to recycle the plastic wrap please. 🙂
